Thanks to Instagram, I’ve been craving for Backyard’s Bibingka Pancakes for weeksss now. Luckily today, I finally got to try them!! 🙂 I even dragged my sister to join me for breakfast at The Grove (The bibingka pancakes are exclusively available at the Grove branch!) when we’re actually nearer the Circuit Makati branch. It was all about the intriguing pancankes!
Bibingka Pancakes at PHP185. As described in the menu: 3 bibingka-flavored pancakes with salted egg, kesong puti, ricotta cheese topped with coconut shavings!

I love that each pancake had an embedded salted egg surprise! 🙂 There’s a happy explosion in my mouth as the fluffy pancakes mix with the cheese and shredded coconut! Unless you’re a heavy breakfast meal eater, I feel this dish is good for two.
My sister paired her order with a cup of brewed coffee. Too bad we didn’t know a plate was heavy enough to be shared by two so we had separate orders. 😛
